OUR HISTORY

As the Owner of Masa Sushi & Robata Bar at the Woodlands, Texas, Masa Nagashima is the leading chef of the restaurant. Originally from Osaka, Japan, he moved to the United States 34 years ago. He and his wife, Alice, came to Houston to help a friend to open a restaurant. During their visit, they felt in love with this place and decided to stay and open their own restaurant in the Woodlands.

Before coming to the United States, Masa has been a professional chef of traditional Japanese food (sushi/kitchen chef) in Osaka, Japan for 11 years. He was formally trained and qualified under the harsh Japanese chef training system which proved to produce high quality chefs. In Japan, the title of sushi chef is prestigious, and as such, is not loosely awarded. During Masa's training, he was forbidden to touch fish for 2 years until the head chef was assured Masa had perfected cooking rice.

Sushi comes from the Japanese words for vinegar (Su) and rice (Shi). Making good vinegar rice is a precision skill, as the consistency and form of the rice is crucial to the overall taste of the sushi. Masa's expert knife skills which can cut and clean each fish in the appropriate manner helps him for earning his reputation.

Together with his wife, Alice, Masa are promoting and offering only authentic, traditional Japanese cuisine, not Americanized Japanese food which altered the original taste and flavor. Eating Japanese food is not only the enjoying of taste and vision, but also a touch of the culture. Only original Japanese food can enhance the touching of traditional Japanese culture.

Originally from Osaka, Japan, Masa Nagashima is the owner and the leading chef of Masa Sushi & Robata Bar at the Woodland, Texas. He has been a professional chef (sushi and kitchen) in a traditional Japanese restaurant in Osaka, Japan for 11 years. His harsh training in the traditional restaurant made him a distinguished chef for making Japanese food especially sushi and sashimi. Together with his wife, Alice, Masa wish to promote and offer authentic, traditional Japanese cuisine, not Americanized Japanese food to the American public in Texas.
